Recipe: Almond Butter-Coffee Breakfast Cookies [Created by Ash (Edgy Staff)]

Amazing glutenfree cookies prepared with minimal grains or sugars

    #glutenfree  OK, they're not 'flourless' and they're not 'paleo', but they're damn close. See below for Paleo or Vegan substitutions!

    Ingredients (we prefer organic ingredients, but do your best):

    • 1/2 ripened banana, mashed
    • 1/3 cup maple syrup
    • 1 egg (free range) *
    • 1 cup almond butter (preferably freshly ground)
    • 1/2 tsp vanilla (preferably Madagascar)
    • 1/3 cup flax meal
    • 1/3 cup gluten free old fashioned oats *
    • 1 tbsp chia seeds
    • 1/2 tsp salt
    • 1 tsp baking soda
    • 1 tbsp coffee (finely ground, medium roast works well)
      • Plus additional for optional topping
    • ~3 tbsp coconut flour
    • ~1/3 cup dark chocolate chunks (we recommend 70%-85% cacao)

    Directions

    • Preheat oven to 350 degrees.
    • Combine all wet ingredients, in this order:
      • 1/2 ripened banana, mashed in bowl
      • 1/3 cup maple syrup
      • 1 egg
      • 1 cup almond butter
      • 1/2 tsp vanilla

    • Then mix in dry ingredients, in this order:
      • 1/3 cup flax meal
      • 1/3 cup gluten free old fashioned oats
      • 1 tbsp chia seeds
      • 1/2 tsp salt
      • 1 tsp baking soda
      • 1 tbsp coffee
    • After these ingredients are all combined together (wet with dry), mix in coconut flour one tbsp at a time. We typically recommend 3 tbsp, though this varies depending on your ingredients (such as thickness of almond butter).

    Gluten Free Almond Butter-Coffee Breakfast Cookies (dry ingredients)

    • Once you achieve the appropriate sticky/thick texture of your batter, fold in some dark chocolate chunks (between 1/4 - 1/3 cup).
    • Place batter onto a cooking tray (Silpat or parchment paper on a cookie sheet) with a heaping tbsp.

    Gluten Free Almond Butter-Coffee Breakfast Cookies (time to bake)

    • Add an optional sprinkle of remaining coffee grounds on top.
    • Then bake in 350 degree oven for 11-14 mins, depending on size of cookies and oven type. Our large cookies took 13½ mins to be just right. Because these are grain free cookies, they will still appear soft upon removing from oven. They should still be soft and have some give to the touch, but the cookie tops should be lightly browned.
    • After removing the cookies from the oven, allow them to rest on the baking sheet for at least 15 minutes before removing them. This will allow them to settle, harden appropriately, and be easier to remove from the cookie sheet (if sticking, give em another minute).

    *  For Vegan and/or Paleo Options:

    • Vegan: Replace 1 Egg with 1 "Flax Egg" (1 tbsp flax meal wit 2.5 tbsp water, rested 10 mins). Make sure you're using dairy free chocolate as well.
    • Paleo: Replace 1/3 cup old fashioned oats with 1/3 cup additional flax meal.
